Conti degli Azzoni and Premiata Fattoria Castelvecchi farms continue the monitoring of Cabernet Sauvignon and Sangiovese ripening grapes . This activity carried out in each parcel of the experimental vineyard, guarantees the optimal quality of the wines.
 
This phase is accompanied by data collection and comparative study of the different types of vineyard management (untreated, worked, fertilized, fertilized + worked) compared to the plant's production capacity and the quality of finished grapes and wines.
